Tuna Sub

Use the best tuna you can find. I like oil-packed but water is OK. Someone you know has a tuna salad recipe.

Served with oven potato wedges.

Ingredients for 2

  • ½ recipe of your favorite tuna salad
  • Sandwich bun or bread (a good one)
  • Thinly sliced cheese (your favorite)
  • Sliced tomatoes
  • Baby spinach leaves
  • Pickles
  • Mayo and mustard
  • Other sandwich toppings (very little out of bounds here)
  • Salt and pepper, to taste

Side: Oven potato wedges

  • 1 lb russet potatoes
  • 1 tbsp olive oil
  • ½ tsp paprika

Instructions

  1. About 40 minutes before serving, start the wedges: heat the oven to 425°F. Cut the potatoes into wedges, toss with the olive oil, paprika and salt, and roast for 30 minutes, turning once, until crisp. If the oven is already in use at a lower temperature, roast on another rack and allow 10–15 minutes longer.

  2. Lightly toast one side of the bun

  3. Add cheese to bottom of bun

  4. Spread a layer of tuna salad

  5. Place several spinach leaves on top bun

  6. Add sliced tomatoes

  7. Add pickle slices

  8. Season with salt and pepper to taste

  9. Combine halves and enjoy.
